Hummus Avocado Toast Recipe

Hummus Avocado Toast

This simple vegan hummus-avocado toast is perfect for breakfast or lunch! Multigrain toast topped with good-for-you toppings ready in under 5 minutes, what could be better!

 

Ingredients

2 oz (these were 1 oz each) sliced whole grain bread, toasted

2 tbsp hummus

6 thin cucumber slices

1 small radish, sliced thin

1 oz avocado, sliced thin (from 1/4 small haas)

crushed red pepper flakes, to taste

1/8 tsp kosher salt

black pepper, to taste

1/4 cup baby arugula

1 wedge fresh lemon

Instructions

Spread the toast with hummus, top with cucumber, radish and avocado, sprinkle crushed red pepper flakes, salt and black pepper. Top with arugula and lemon juice.
