Japanese Soy-Vinegar Dressing

Summary Soy sauce is high in sodium, which is associated with an increased risk of high blood pressure. However, it is lower in sodium than table salt, and sodium-reduced varieties are available. Soy sauce can be included as part of a healthy diet rich in whole foods.

Ingredients

1 T light soy sauce
2 T rice vinegar
3 T stock
1/2 t fresh ginger

Instructions


Procedures: This is a basic vinaigrette-style dressing that works well with
shredded vegetables.

IN A BOWL, whisk together the ingredients. Toss with salad ingredients
and serve chilled or at room temperature. Makes 3/4 Cup
