Shrimp Melon Salad
It’s on the table in less than 30 minutes, and it combines beautiful colors, healthy nutrients, and summer flavors. It’s light, it’s refreshing, and the colorful melon balls make me giddy because they take advantage of the season’s fresh, ripe produce.
150 g medium shrimps
1 can (439 g) DEL MONTE Fiesta Fruit Cocktail, drained (reserve syrup)
1 medium (500 g) melon (cantaloupe), cut into tidbits
1/2 cup mayonnaise
1/4 cup DEL MONTE Original Blend Ketchup
Procedures: 1 COOK shrimps in fruit cocktail syrup for 5 minutes. Peel and slice into tidbits. Combine with DEL MONTE Fiesta Fruit Cocktail and melon.
2 MIX mayonnaise, DEL MONTE Original Blend Ketchup, 1/4 tsp. iodized fine salt and 1/8 tsp pepper. Add to the fruit mixture. Blend well. Chill until ready to serve.
