Vegan Pepperoni Cheese Pizza

Ingredients

Dough
3/4 cup warm water
1/4 cup white grape juice
1 tablespoon yeast
1 1/2 cup whole wheat pastry flour
1 1/4 cup bread flour
2 tablespoons extra light olive oil
1 tablespoon malted barley flour
1/2 teaspoon Himalayan/sea salt
A few generous sprinkles Italian herb seasoning

Topping
1/2 cup Rao’s Arrabbiata
1 cup vegan mozzarella cheese
1 teaspoon garlic powder
1 teaspoon onion powder
A pinch red pepper flakes
A big handful vegan pepperoni
A few sprinkles chili powder

Instructions

  1. In a small bowl, combine the ¾ cup of warm water (if you’re using grape juice from the fridge, make sure it’s the warmest setting on the tap) and grape juice together. When mixed, the liquid should be lukewarm.
  2. Then, add the yeast and stir with a spoon until everything is dissolved.
  3. In a large bowl, combine the two flour, olive oil, malted barley flour, salt and Italian herb seasoning.
  4. Drizzle the yeast and liquid, then stir with a spoon for a few seconds. Use your hands to knead the dough until it becomes smooth, silky and non-sticky.
  5. Cover the bowl with a lid or damp towel and put it in a warm place (I heat the oven up for 5 minutes, turn it off and let some of the heat out, then put it in the oven) to rise for a couple of hours.
  6. After the dough has rinse: Preheat oven to 375°F (191°C).
  7. After the dough has risen double its size, punch it down and knead again until it’s smooth. You may want to add a little more flour so it doesn’t stick.
  8. Have a pizza tray ready and spray it with some non-stick cooking oil.
  9. Roll the dough into a round ball, then flatten it with a rolling pin into a size of a flat, large circle on the pizza tray (mine has holes).
  10. Drizzle the Arrabbiata sauce over the top and spread it evenly, then sprinkle on the vegan mozzarella cheese. Sprinkle the garlic powder, onion powder and red pepper flakes across, and spread the vegan pepperoni evenly on top. Then, sprinkle some chili powder on top.
  11. Finally, give the top of the pizza a generous spray of cooking oil.
  12. Leave it to rise for about 5-10 minutes, then put it in the oven and bake for 20 minutes.
